Veggie Dip Extraordinaire

Vegetable Dips are a great way to enhance the flavor and add nutritional value to a meal.  Children love them. Adults thrill to them.

Veggie Dip
 
1 - 8 oz cream cheese
1 - 8 oz plain yogurt
1/2 cup grated cheese (any kind)
1/4 cup fresh green onion - minced
1/4 cup fresh chopped parsley
2 cloves garlic finely chopped
1/2 tsp fresh ground pepper
1/2 tsp fresh finely chopped thyme
1/2 tsp fresh finely chopped rosemary
 
Blend cheeses and yogurt til smooth - add veggies, blend and chill to blend flavors. Serve with a mixture of veggies; broccoli, carrots, cauliflower, peppers, onion, mushrooms.  This dip is also delicious with bread chunks or meats. 
 

Color Dippers
 
2 cups sour cream
1/2 cup onion finely chopped
1/4 cup finely chopped parsley
1/4 cup finely chopped red pepper
1/4 cup finely chopped orange pepper
1/4 cup finely chopped green pepper
1/4 cup finely chopped broccolli
1/2 tsp fresh ground pepper
1/2 cup finely chopped crisp bacon
 
Blend all ingredients and serve with veggie dippers.  Great with cucumber and carrot sticks.

Hot Cheese Dip
 
8 oz cheddar cheese
8 oz cream cheese
8 oz monteray jack cheese
 
Blend cheeses in crock pot and melt.
 
2 cups finely chopped spinach
1/2 cup finely minced fresh onion
1/2 cup finely chopped tomato meat (remove seeds and skin)
1/2 cup finely chopped crisp bacon
 
Mix into melted cheese and allow to heat on low until spinach becomes soft and hot.  Serve with veggies, crackers, or meat dippers.
 
 

Five servings of fresh fruit and veggies a day are easy
when you use dippers and dips as snack fillers.
